J insisted tht we bake cookies yesterday so I did the Mommy thing in the kitchen and let J and K help with the cutting . . .  phew glad that is over.



Here is the recipe we used:



1Kg Cake Flour

500gr Sugar

500gr Margarine/butter

2Tbsp Baking powder

2tsp salt

5 eggs

10ml vanilla (optional)



Method:

Cream margarine and sugar until light and fluffy

Add eggs one at a time beating well after each addition

Sift dry ingredients and fold into egg mixture

METHOD:

Flour





Sugar and Cocoa





Mix





Spoon in 1 egg





Mix





Pour in Milk and Oil





Mix well





Put in microwave for 3 minutes on maximum power (1000watt) 





Wait until it stops rising and sets in the mug 





Tip contents out of mug onto saucer and enjoy!

For dessert, Sweet Rice Pudding, this will always be part of our desserts at Christmas or Easter meals:



You will need:

125g white rice

250ml water

pinch of salt

500ml milk, warmed

1 stick cinnamon

strip of lemon rind

200g sugar

25g butter

3 egg yolks

10ml grated lemon rind

ground cinnamon for decoration

1pkt chicken fillet breast

half cup Denny Napolitana sauce

half onion

Butternut peeled &amp; cubed

4 courgettes (baby marrows)

Pasta shapes - enough for your family (about a quarter packet for 4 people)



Fry the onion in some olive oil, add the chicken and brown.  

Add butternut and allow to soften

Add Napoletana sauce

1 green pepper, chopped

1 chilli, chopped finely

1 or 2 tomatoes, chopped

1 or 2 cloves of garlic, chopped



Mix everything together, let it stand, and serve chilled.



I suppose if you add broad beans, and canelotti beans or other beans, add a half a cup of vinegar and a liberal dashing of olive oil, you would have a traditional three bean salad?

			<description>Put all the left overs into a ovenproof dish. For 23cmx23cm dish use approximately 1 time the following mixture to add to left overs to make a tart:

pinch salt

approximately 1 cup milk

3 heaped tbsp flour

some oil (10ml) if desired to make a bit more moist

3 tsp chicken stock

1 roll puff pastry

150ml cream - I use the woolies double thick cream
