very similar to the one us Brits make, although this one is a whole lot more exciting!!!

Arroz Doce (Rice Pudding)

Ok, so I HAD to contribute a recipe and it HAD to be a typical Portuguese dish......so here goes. Laughing
For dessert, Sweet Rice Pudding, this will always be part of our desserts at Christmas or Easter meals:

You will need:
125g white rice
250ml water
pinch of salt
500ml milk, warmed
1 stick cinnamon
strip of lemon rind
200g sugar
25g butter
3 egg yolks
10ml grated lemon rind
ground cinnamon for decoration

Method:
~Boil rice in salted water for 10minutes. Strain.
~Add the warm milk, cinnamon stick and lemon rind. Simmer until the rice is cooked.
~Remove the cinnamon stick and lemon rind. Add sugar and butter and continue cooking for 5-10 minutes.
~Beat egg yolks. Add a little of the warm rice mixture to the egg yolks, mix well together, then pour into the saucepan.
~Simmer for 2-3minutes, stirring continuously.
~Add grated lemon rind.
~Pour onto large platter, sprinkle with ground cinnamon (make patterns on rice surface if you're feeling creative)
