Savoury Rice

Savoury rice - great for meal accompaniement or at braai's

Ingredients:

2 cups rice (white or brown)
1 Green Pepper chopped
125gr mushrooms sliced
1 small/medium onion chopped
Pinch Cayenne Pepper (or to taste)
5ml Paprika
125ml cream
2 Tablespoons sour cream
1tsp salt
50- 100gr butter (not margarine)

Method:

Cook rice as usual
Saute onions in the butter until soft then add green pepper and mushrooms
Add salt, paprika and cayenne pepper
Once the rice is cooked, add the onion mix to the rice and mix in well
Add cream and then sour cream, mixing well with each addition

For a low fat option, cut out the cream and sour cream and add 4 Tablespoons of low fat or fat free cream cheese. OR, add 2 Tablespoons flour and and add once onions, greenpeppers & mushrooms are soft, mix well then gradually add 250ml milk (low fat now girls).

The cream option is the best but for those of us with cholesterol issues, the really low fat milk version will have to do.
